You can find these Fettuccine at the Ramo D’Oro in Nemi, a small town in the province of Rome  overlooking Lake Nemi, a volcanic crater lake. It is about 30 kilometres southeast of Rome.

The meat of the hare is part of the so-called ” black meat ” characterized by a pungent odor.  Usually served with home made fettuccine or pappardelle, this is one of my favourite pasta plates.
